Flax Carrot Muffins (Gluten-Free w/ Vegan Options)
- 1 Cup Ground Oatmeal
- 3/4 Cup Almond Flour
- 1/2 Cup Unsweetened Coconut Chips
- 1/2 Cup Toasted Walnuts
- 1/4 Cup Ground Flax
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 tsp Nutmeg
- 1 tsp. Cinnamon
- 1 tsp. Ginger
- 1/3 Cup Raisins
- 1 Cup Carrot (shredded)
- 1/3-1/2 Cup Maple Syrup
- 2 Tbsp Butter (*Coconut Oil to make vegan)
- 2 Eggs (*2 Flax Eggs to make Vegan.)
- 1 Flax Egg=(1 Tbsp Ground Flax+2.5 Tbsp water)x15min in Fridge
- 1/2 Cup Almond Milk
Directions:
- Preheat oven to 350F
- Grease muffin tin
- Combine all dry ingredients
- Combine all wet ingredients
- Incorporate together
- Bake 15-20 min, or until a toothpick comes out clean
