Flax Carrot Muffins

Flax Carrot Muffins (Gluten-Free w/ Vegan Options)

  • 1 Cup Ground Oatmeal
  • 3/4 Cup Almond Flour
  • 1/2 Cup Unsweetened Coconut Chips
  • 1/2 Cup Toasted Walnuts
  • 1/4 Cup Ground Flax
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 tsp Nutmeg
  • 1 tsp. Cinnamon
  • 1 tsp. Ginger
  • 1/3 Cup Raisins
  • 1 Cup Carrot (shredded)
  • 1/3-1/2 Cup Maple Syrup
  • 2 Tbsp Butter (*Coconut Oil to make vegan)
  • 2 Eggs (*2 Flax Eggs to make Vegan.)
    • 1 Flax Egg=(1 Tbsp Ground Flax+2.5 Tbsp water)x15min in Fridge
  • 1/2 Cup Almond Milk

Directions:

  1. Preheat oven to 350F
  2. Grease muffin tin
  3. Combine all dry ingredients
  4. Combine all wet ingredients
  5. Incorporate together
  6. Bake 15-20 min, or until a toothpick comes out clean
